Harvest Green - Harvest Holiday Side Dishes

December 18, 2023

What does the star of your holiday meal need? Back up in the form of delicious side dishes — side dishes that include a cornucopia of vegetables (after all, we can live on Christmas cookies alone). You can pick up the freshest seasonal vegetables around at the Harvest Green farmers market. What should you do with them? Here are a few delectable ideas.

Do the Mashed Potato (Or Not)

Mashed potatoes are a staple of holiday meals but that doesn’t mean they need to be boring. Try adding a little garlic into the mix. Get colorful with mashed sweet potatoes. Don’t have a lot of time? Let your crockpot do the work of cooking up scalloped potatoes. Impress your guests with a potato galette that’s a snap to make.

Eat Your Greens

Got radicchio? Turn it into a stuffing filled with bacon and chestnuts. Braised escarole with olives and raisinsgoes great with honey baked ham. Collard greens with spiced butter? Yes, please. This ultimate winter saladmight just overshadow the turkey.

Root for Vegetables

A bounty of root vegetables can be turned into this elegant Tarte Tatin. Keep things simply delicious with this easy celery root and carrot recipe. Fennel is easy to roast and tasty to eat. This colorful beet salad will be on your Christmas list for years to come.

Better Brussel Sprouts

Christmas wouldn’t be Christmas without brussels sprouts with a balsamic reduction and walnuts. Skip the green beans and serve this brussels sprout casserole instead. Brussels sprouts get a colorful makeover when paired with cranberries. Don’t like whole brussels sprouts? Give them a shave.

Creative Cauliflower

Don’t think cauliflower belongs on the holiday table? This cheesy gratin will change your mind. What do you get when you mix broccoli and cauliflower with Mac 'n' Cheese? A happy tummy. Cauliflower and pomegranate make for a pretty tasty dish.

Squish Squash

Why serve stuffing when you can serve butternut squash bread pudding instead? Don’t like peeling squash? With this recipe, you won’t have to. Acorn squash takes a little more time, but it’s soooo worth it. Kids will dig into this roasted spaghetti squash. Garnish your ham with roasted Delicata squash with lady apples.
