We hosted a fantastic workshop — Meal Prep for Realtors — last month that brought out about 60 agents interested in eating good food and good-for-you food. Couldn’t make it? We have some tips from presenters and health advocates John Cartee and Yuri Torres:
Each guest also received a cookbook with quick and easy recipes for busy Realtors. Below are two of our favorites: Beef Enchiladas Preheat oven to 350 degrees. In a medium to large rectangular baking dish, spray with nonstick cooking spray and set aside. In a medium/large frying pan, add ground beef and cook through. Then add green chilies and black beans. Turn off heat and let rest 1-2 minutes. On a flat surface, lay out the six tortillas. Add the cooked beef and mozzarella cheese on top of each tortilla. Wrap the tortillas with the ends open and transfer to your prepared dish. Pour enchilada sauce over the enchiladas and top with cheddar cheese. Bake for 30 minutes or until bubbly. Nutrition: Fats 6g, carbs 24g, protein 38g. Calories 268 Tuna Avocado Toast Toast two slices of bread. In a mixing bowl, add remaining ingredients and combine. Spread tuna mixture evenly onto toast. Add tomato or drizzle with sriracha (or both!). Nutrition: Fats 16g, carbs 28g, protein 27g. Calories 340
